The enzyme, found only in plants that belong to the Capsicum genus, catalyses the last step in the biosynthesis of capsaicinoids. The enzyme catalyses the acylation of vanillylamine by a branched-chain fatty acid. The exact structure of the fatty acid determines the type of capsaicinoid formed.
